Ingredients

Ingredients:

    For the roll:

    • 2 or 3 Store-bought or homemade lavash flat bread leaves (or tortilla leaves),
    • 3-4 Tablespoon butter
    • Ingredients for Homemade Lavash Tortilla; (if you want, you can make your own Lavash/Tortilla),
    • 1/2 or 1 Cup all purpose flour
    • 1 or 1/2 Teaspoon salt
    • 1 Cup of Water
    • 1/2 Cup of Yogurt (optional),

    For the Meatball (Kebab):

    • 600 gr Ground meat lamb or beef,
    • 1 Egg
    • 2 Tablespoons breadcrumbs
    • 1 Small Onion grated or blended,
    • 2-3 Cloves garlic grated or blended,
    • 1 Teaspoon Cumin
    • 1 Teaspoon Red pepper flakes
    • 1 Teaspoon Ground black pepper
    • 1 Teaspoon salt

    For the sauce (Caramelized Tomato Sauce):

    • 4 Normal size tomatoes (grated or blended),
    • 1 Tablespoon Tomato paste
    • 2 or 3 Cloves garlic (grated or blended),
    • 3 Tablespoons butter
    • 1 Teaspoon Red pepper flakes
    • 1 Teaspoon salt
    • 2 Cups hot water

    For serving:

    • Yogurt
    • 1/4 Bunch of parsley chopped,

    Instructions

    • 1- First of all, put your all ingredients on your work surface. First prepare your meatballs (kebabs); Take your ground beef, breadcrumbs, egg, onion (blended), garlic (blended), ground black pepper, red pepper flakes, cumin, salt in a container, knead about 10 minutes and let it to rest for a while (45-50 minutes).
    • 2- Then heat your oven to 175 °C (347 °F), Make approximately 10-15 cm. (nearly 4-6 inches) long flat and thick meatballs (kebabs) by your hands from the meat mixture (bye the way, put water in a small bowl and keep it next to you. And dip your hands in this water frequently while shaping the meat. The water will help keep the mixture from breaking).
    • 3- Then, put a wax paper on your baking tray, align your kebabs in your tray and cook them in your oven for about 10-12 minutes. While waiting for the kebabs, prepare your Caramelized Tomato Sauce.
    • 4- For tomato sauce; put your butter in a saucepan and melt it. Then add blended tomatoes and garlic into melted butter and sauté for about 3-4 minutes as stirring constantly. Then add tomato paste into mixture sauté for about 1-2 more minutes and stir constantly. Lastly add your 2 cups hot water and stir your sauce until your sauce get a liquid consistency.
    • 5- Then take your store bought lavash (tortilla) leaves or if you want, you can prepare your own lavash in your kitchen. For Homemade Lavash (tortilla); First of all, in a medium bowl, combine your all purpose flour, water, yogurt and salt. With a spatula or wood spoon, mix ingredients and stir until a dough forms (or Use your hands to gently form a dough, which is sticky at this point) then cover the dough with a towel (or foil), and leave to rest for 15-20 minutes. Divide the dough into 2 or 3 balls and dust each ball generously with flour. Then, use a rolling pin to flatten each ball up. Roll them out into a thin disc. Then, heat up a skillet to medium-high heat and place the rolled out your dough onto the dry pan. Cook for 3-4 minutes until brown spots form, flip, and heat for another 3-4 minutes until brown spots form. That's it. Our homemade lavashs (tortilla) are ready.
    • 6- Then lay your lavash (or tortilla) leaves on your counter, cut into two pieces from the middle and spread melted butter on them with a brush. Align your kebabs through the wide side of the lavash leave and roll the lavash leave firmly. Cut your beyti kebab as three finger thicknes slantwise. Align your kebabs in your tray again and cook until the top fries. Take your beyti kebab in your serving plate and pour your tomato sauce through.
    • 7- Serve Beyti Kebab with yogurt and sprinkle the choped parsley on tops.
