To start you will need to prep your zucchini,
Thinly slice your zucchini and line them on a baking sheet and put a thin layer of salt to draw out the moisture, this I find personally is best done over night but can also but done in a couple hours.
With that aside
You will start with browning your ground beef and season with 1 tablespoon of each seasoning except Italian seasoning. (Garlic and onion powder, salt pepper.)
Once done you can put your garlic, chopped onion and green pepper and let cook until softened. About 5-7 minutes
Then add your pasta sauce, tomato paste and Italian seasoning cover and let simmer for 30 minutes once done set aside to cool a bit
While that is cooking you can prepare your cottage cheese if you opt out then skip this step.
In a clean bowl add your cottage cheese, rest of the seasonings (garlic and onion powder, salt and pepper) and the one large egg.
Mix and set aside
Now time to assemble.
Take a paper towel and pat the zucchini dry.
In a glass pan put about 1 -1/2 scoops on your sauce then layer your zucchini like you would lasagna noodles.
Once you put your next spoonfuls of meat sauce on your zucchini you will next add a tablespoon of cottage cheese mixture to each corner and a tablespoon in the middle like this ( :•: ) then repeat the layering process and top with grated cheese
Cook 350• for 45 minutes and let sit to cook for 10 minutes. Then enjoy 🙃
