I mean who doesn’t loveeee nachos!? I make this often and we mix it up with different stuff everytime! The ideas are practically endless ?
1lb of ground beef (can use pork or chicken)
1 finely chopped onion
2-3 cloves of finely chopped garlic
4-5 mushrooms ( depending on size)
1 package of taco seasoning
3 cups shredded cheese of choice
2 bags of tortilla chips
1-2 diced tomatoes
1/4 cup chopped green onion
1/4 cup of sliced olives (optional)
Start cooking your ground beef and about half way through that put your chopped onion, mushroomand garlic and let simmer until meat if fully cooked! Drain the extra juices and return back to stove and mix in the taco seasoning and 1 cup of water and let simmer for 5-7 minutes on low heat. While waiting for that to finish you will want to chop up all remaining ingredients and put into separate bowls. In a large glass baking dish put one layer of your tortilla chips , then sprinkle some of your meat mixture, then cheese, and then your chopped up vegetables of choice (except the green onions!). Keep doing layers until all your ingredients are gone. Top with more cheese and put it in the over at 400 for 7 minutes or until cheese is fully melted, take it out then top with green onions and enjoy! You can top it with salsa, sour cream and/or homemade guacamole! Will add guacamole recipe in the coming days 🙂
