Beef Estofados is a Spanish stew, it’s packed with flavour! You can eat it alone or serve it over some rice.
1lb diced stew beef
1 large onion (red or yellow)
3 finely chopped cloves of garlic
1 large green pepper
2 large tomatoes
1 cup of chopped mushrooms
1 cup thinly sliced carrots (optional)
4-5 potatoes depending on size
1/2 lemon
2 tablespoon salt
2 tablespoon of black pepper
2 tablespoon of garlic powder
2 tablespoon of onion powder
2 tablespoons of cumin
To start, add 2 tablespoons of olive oil to a pot and put
beef stew, 1 tablespoon of each seasoning and let it brown about 5-7 minutes on medium. Then add your chopped onion and chopped garlic and let boil for another 2-3 minutes. Next add the remaining ingredients as well as your half a lemon (juice) and turn heat down to low heat and let simmer for 1 hour. You can add more or less seasoning to taste and add about 1 cup of water 30 minutes into simmering, depending on the amount of flavourful juices you would like to have for your rice. Hope you enjoy
