Sear The Roast
Place seasoned roast (fat side up) into a roasting pan. Place roaster into a preheated 450°F oven with the lid off. Sear for 30 minutes.
Slow Cook The Roast
Next, cover the roasting pan with the lid and reduce heat to 325°F. Continue roasting for 4 hours or until an internal temperature of 160°F is reached.
Let It Rest
Finally, remove roast from oven and let it rest with the lid on the roaster for 5 to 10 minutes.
