The heat doesn’t stick around for long. It’s totally enjoyable when you want to spice up your meal.
10 ounces chili peppers
1 medium onion
3 cloves garlic
2 c vinegar
1 Tbsp kosher salt
Cut up 10 ounces of chili peppers into 1 inch chunks, dice one medium onion and mince 3 cloves of garlic. Put into a medium sauce pan with 2 cups vinegar and 1 Tbsp kosher salt. Bring to a boil, then cook over medium heat for 10 minutes or until chilies are tender. Remove from heat, cool slightly, then pour into food processor. Process until mixture is smooth. Pour into sterilized jars and process in hot water bath for 15 minutes.
