I wanted a Gluten-Free recipe for Snickerdoodles and I found this amazing recipe. The cookies turned out awesome.
2 3/4 cups flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups sugar
1/2 cup margarine + 1/4 cup soft margarine
1 tsp vanilla
For rolling: 2 Tbsp sugar and 1 1/2 tsp cinnamon
Preheat oven to 400°F. Whisk flour, cream of tartar, baking soda and salt together and set aside. Cream margarine and sugar together. Add eggs and vanilla and beat until smooth. Add dry ingredients, mix until combined. Divide dough into 24 equal portions, roll in cinnamon sugar and spread out 2″ apart on parchment-lined cookie sheet. Bake for approximately 10 minutes.
